I have attempted many meat loaf recipes and failed. Too dry, not cooked through enough, too greasy, too tough, too crumbly, falls apart, etc. I loved the flavors in this Pizza Meatloaf. The texture came out perfectly. I loved the way it tasted and loved the way it looked cut in triangles. Next time, I will add more “pizza ingredients” to my meatloaf like green pepper and olives! And even better, this recipe is ONLY 6 Weight Watchers Points Plus per serving!!!
Get out your ingredients.
In large bowl, combine ground beef, bread crumbs, instant minced onion, salt, eggs and 1/2 cup of the pizza sauce.
Press mixture evenly into greased cake pan. Bake at 350 degrees for 30 minutes.
Remove loaf from oven. Drain drippings. Spread 1/2 cup pizza sauce on top and any additional toppings you want (green peppers, olives, pepperoni, etc.) Return to oven and bake additional 30 minutes.
Remove from oven. Sprinkle cheese on top. Return to oven for 5-10 minutes or until cheese is melted. Cool 5 minutes and cut into wedges to serve.

1.5 lbs lean ground beef ( I used 93%)
1/3 cup Progresso Italian Style Bread Crumbs
1 teaspoon instant minced onion
1/4 teaspoon salt
8 oz pizza sauce
1/2 cup shredded Italian Cheese Blend (I used Part-Skim Mozzarella)
Heat oven to 350°F. Spray 8-inch round cake pan with nonstick cooking spray.
In large bowl, combine ground beef, bread crumbs, instant minced onion, salt, eggs and 1/2 cup of the pizza sauce; mix well. Press mixture evenly in sprayed pan. Bake at 350°F. for 30 minutes.
Remove loaf from oven. Drain and discard drippings from pan.
Spread top of loaf with remaining pizza sauce. If desired, add other favorite pizza toppings such as green bell pepper strips or sliced olives.
Return to oven; bake an additional 30 minutes or until thoroughly cooked in center and meat thermometer registers 160°F.
Sprinkle top of loaf with cheese. Bake 5 to 10 minutes or until cheese is melted. Let stand 5 minutes before serving. To serve, cut into wedges. (I cut mine into 6)
