Sweet & Sour Meatballs

Sweet & Sour Meatballs is the ONLY recipe that my mom would make when my four siblings and I were kids and we would ALL eat it and LOVE it. This meal was always requested by all five kids for my mom to make on our birthdays.  This was my first attempt at making it and it came out perfect because I had my mom help me with the sauce, Try it…you will love it.

Combine ground beef, sausage, eggs, milk, oatmeal, salt, pepper, and nutmeg.

Form into balls….I made my balls too big…smaller next time. Put in oven and bake at 400 for about 20 minutes.

Remove from oven and set aside while you make sauce.

To make sauce, mix brown sugar, vinegar, pickle juice, lemon juice, soy sauce, and pineapple juice. Cook until boils.  Add water to cornstarch to thicken and add to sauce.

Add meatballs and simmer for 10 minutes.

Add parboiled celery, parboiled carrots, onions, bell pepper, pineapple chunks and water chestnuts to pot.

Cook an additional 5 minutes.

Sweet & Sour Meatballs Recipe

Ingredients:

Meatballs

1.5 lb sweet Italian sausages

1.5 lb ground beef

2 eggs

1/2 cup milk

1 cup oatmeal

1 teaspoon salt

1/2 teaspoon pepper

1/2 teaspoon nutmeg

SAUCE

3/4 cup brown sugar

3/4 cup vinegar

3 tablespoons sweet pickle juice

3 tablespoons lemon juice

3 tablespoons soy sauce

corn starch to thicken and cold water

2 cups pineapple juice

VEGETABLES AND FRUITS

2 cans pineapple chunks

1 cup parboiled carrots

3/4 cup celery, chopped and parboiled

medium onion, sliced

1 red or green bell pepper sliced

1 can water chestnuts, drained

Directions:

 

Combine all ingredients for meatballs and mix.  Form into balls.  Bake at 400 degrees for 20 minutes.

Combine all sauce ingredients into a large stockpot.  Wait for sauce to boil, then add cornstarch and water to thicken.

Place cooked meatballs into sauce and simmer 10 minutes.

Add parboiled carrots, parboiled celery, pineapple chunks, water chestnuts, onions, and pepper to pot and cook 5 more minutes.
